1/2 kilograms mutton
1 tablespoon garlic paste
1 cup refined oil
2 leaves bay leaf

1 tablespoon coriander seeds
3 cup tomato
1 tablespoon ginger paste
1 cup onion paste
1 tablespoon cumin seeds
2 teaspoon garam masala powder
1/2 teaspoon turmeric
1/2 teaspoon red chilli powder

- Sauté Onion and Spices
Heat oil in a kadhai and add cumin seeds and a bay leaf. When the cumin seeds start to splutter, add ginger, garlic, and onion. Sauté over high heat until the mixture turns light brown. Then, add garam masala, salt, turmeric, coriander powder, and red pepper. - Add Meat and Cook
With the heat still on high, add the meat and cook until it changes color. Add a little water, reduce the heat, and cover the kadhai. Let the meat cook, stirring occasionally, until the water evaporates and the oil separates. Add tomatoes and let the mixture simmer until the oil separates again. - Garnish and Serve
